Background: WSU is leading the world in a developing a new food processing method that uses radio frequencies and microwaves. This method could lead to new products including shelf-stable salmon, and could open up millions of dollars in new markets for a range of high quality products including fish, meat, and pasta products.
Progress in 2003/2004: Developed preliminary stages of a computer model that would enable testing of the new process in a virtual system. By analyzing different design and process options to optimize the system design on a WSU-designed computer model, millions of dollars and decades of times are saved in developing this new technology.
Next Steps: Develop the model to the point where it produces reliable, stable results that will be critical for FDA approval for this method. Ultimately, the goal of the project is to develop the concept and to obtain necessary approval for this new processing method to be implemented by the food processing industry, opening the way for new products at home and globally.
